Sow seeds directly in well-draining, loose, fertile soil in early spring, after the last frost, or in late summer for a fall harvest. Plant seeds about 1/2 inch deep, spacing them 1-2 inches apart. Parsnips prefer cool temperatures (55°F - 75°F/13°C - 24°C) and full sun to partial shade. Keep the soil consistently moist but not waterlogged, as they need even moisture for proper root development. Thin seedlings to 4-6 inches apart once they are large enough. Fertilize lightly with compost or a balanced fertilizer to encourage healthy growth. Parsnips take 100-120 days to mature. Harvest in late fall or early winter after the roots are 6-10 inches long, when they are firm and have a sweet flavor. Mulch to protect the roots if harvesting after the first frost.
