Sow seeds directly in well-draining, fertile soil after the last frost, or start indoors 4-6 weeks before transplanting. Plant seeds about 1/4 inch deep in a sunny location. New Zealand spinach thrives in warm temperatures (70°F - 85°F/21°C - 29°C) and full sun. Keep the soil consistently moist but not soggy, especially during dry periods. Thin seedlings to 12-18 inches apart to allow for proper growth. Water regularly to maintain moisture, but avoid waterlogging. Fertilize with compost or a balanced fertilizer to encourage strong growth. Harvest the young, tender leaves once the plant is established, typically 50-60 days after sowing. This spinach is heat-tolerant and can be harvested multiple times throughout the growing season.
