1. Sow Indoors or Outdoors:
- Indoors: Start seeds indoors about 4–6 weeks before the last frost. Sow seeds 1/4 inch deep in seed trays or pots with a well-draining potting mix. Keep the soil moist and maintain a temperature of 70–85°F (21–29°C). Germination takes 7–14 days.
- Outdoors: Directly sow outdoors after the last frost in early spring or late summer. Space seeds about 1 inch apart, and thin seedlings to about 12–18 inches apart once they have a few leaves.
2. Sunlight and Care: Chinese spinach thrives in full sun or partial shade, especially during hotter months. Water regularly to keep the soil moist, but avoid waterlogging. Mulching can help retain moisture and suppress weeds.
3. Harvesting: You can start harvesting leaves as early as 4–6 weeks after sowing for baby greens. For larger, mature plants, allow them to grow for 8–10 weeks before harvesting the entire plant.
Red Calaloo is prized for its rich flavor and tender, nutritious leaves, often used in soups, stir-fries, and salads.
