Cardoon seeds (Cynara cardunculus) should be sown in early spring, either indoors or directly in the garden. Plant the seeds about 1/4 inch deep in well-draining, fertile soil. Keep the soil consistently moist until germination, which typically takes 10-14 days. Cardoon prefers full sun and cooler temperatures, thriving in zones 7-9. Once seedlings are strong, thin them to 18-24 inches apart to allow for their large growth.
